Lolo Cave à Manger feels more like a studio apartment party than a wine bar. Loïc “Lolo” Minel, a DJ-turned-hospitality figure (Hôtel Grand Amour, Chez Jeannette, and Silencio), built it that way with restaurateur Christophe Juville of Spok.
There’s one long table in the middle, cherry red walls, and bar counters along the edges. Most people stand. After a few glasses, you stop noticing that you’re shoulder to shoulder with the next group - cigarettes and numbers get exchanged, the staff start flirting back. Some of the waiters bail on the tables that spend too long dissecting small plates and flavor profiles, drifting over to friends who just showed up instead.
