Café Nuances is a take on the LA/NYC coffee wave: minimalistic branding, matcha (rarely done right in Paris), pistachio and rose lattes. The founders spent time in both cities, pulled what worked, and made it better: house-roasted beans, multiple brew methods.
Julian Sebban (Uchronia) designed it to bridge past and future. The 1920s exterior signage (dairy, butter, eggs) and Art Deco tiles stayed, but inside, it feels like a spaceship bar.
