Café Nuances takes the LA/NYC coffee wave—clean branding, matcha (rarely done right in Paris), pistachio and rose lattes—but with that Parisian fixation on getting it right. The founders spent time in both cities, pulled what worked, and made it better: house-roasted beans, multiple brew methods, actual craft behind the aesthetic.
Julian Sebban (Uchronia) designed it to bridge past and future. The 1920s exterior signage (dairy, butter, eggs) and Art Deco tiles stayed, but inside, it feels like a spaceship bar.
