Why It Matters

Why It Matters

Le Dauphin is the only restaurant in France designed by Rem Koolhaas/OMA. It sits next door to its sister restaurant Le Chateaubriand. When it opened in 2010, people called it an austere marble box and complained the speakers were too loud. Not surprising for the world’s most controversial architect. Staff wear Isabel Marant button-downs.

The room looks cold, but the food is very French and easy. There’s a €25 formule and a pasta of the day every Tuesday. Chefs rotate every few years, but Iñaki Aizpitarte’s tapioca parmesan croquettes are still the first thing people order.
