Le Pain Retrouvé has become the go-to boulangerie for a certain league of bakers like Paris Starn, Katie Merchant, and Gaby Scelzo.
Most find it through friends, or after seeing (and smelling) the line snaking down Rue des Martyrs while picking up a Saint-Marcellin. The founder, Hugues Mestreaud, trained with the Compagnons du Devoir and is recognized by Grands Moulins de Paris, the century-old flour house.
