Wagoya grew out of @ramen.pr0ject: a feed of marinated eggs, mise en place, and broth tests. And after a year of pop-ups, Lise and Tsubasa finally opened a permanent spot with a line of mostly locals and visitors from Japan. They kept the old crêperie sign, so some still think it’s a pop-up.
It’s already been crowned the best ramen in Paris.
